Description

Ingredients

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs small red or Yukon gold potatoes, quartered
  • 2 tbsp olive oil
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 1/2 cup chicken broth (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Combine olive oil, garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper in a bowl.
  2. Add chicken and potatoes to the bowl and toss to coat evenly.
  3. Transfer chicken and potatoes to the slow cooker. Add chicken broth, if using.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked and potatoes are tender.
  5. Shred chicken in the slow cooker, if desired. Stir to combine with potatoes and juices. Serve or portion into meal prep containers. Garnish with parsley if desired.
