A simple, hands-off slow cooker recipe for chicken and potatoes, perfect for preparing meals in advance.
Ingredients

- 1.5–2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs small red or Yukon gold potatoes, quartered
- 2 tbsp olive oil
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- 1/2 cup chicken broth (optional)
- Fresh parsley, chopped (optional)
Instructions
- Combine olive oil, garlic powder, onion powder, paprika, oregano, thyme, salt, and pepper in a bowl.
- Add chicken and potatoes to the bowl and toss to coat evenly.
- Transfer chicken and potatoes to the slow cooker. Add chicken broth, if using.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked and potatoes are tender.
- Shred chicken in the slow cooker, if desired. Stir to combine with potatoes and juices. Serve or portion into meal prep containers. Garnish with parsley if desired.
Notes
- For larger potatoes, cut them into 1-inch chunks.
- Shredding the chicken directly in the slow cooker makes for a cohesive dish.
