One-Pot Hearty Sausage and Lentil Soup

Description

A simple and satisfying sausage and lentil soup made entirely in one pot for easy cleanup.


Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup brown or green lentils, rinsed
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste
  • 2 cups fresh spinach or kale, roughly chopped
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease, leaving about 1 tablespoon in the pot.
  2. Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken or vegetable broth and diced tomatoes (with their juices). Add the rinsed lentils, bay leaf, dried thyme, salt, and pepper. Stir everything together.
  4. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender. Remove and discard the bay leaf.
  5. Stir in the fresh spinach or kale and cook for 2-3 minutes until wilted. Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with fresh chopped parsley, if desired, before serving hot.

Notes

  • For a vegetarian option, use vegetable broth and omit the sausage.
