Description
A simple and satisfying sausage and lentil soup made entirely in one pot for easy cleanup.
Ingredients

 - 1 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 medium yellow onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup brown or green lentils, rinsed
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper, or to taste
- 2 cups fresh spinach or kale, roughly chopped
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease, leaving about 1 tablespoon in the pot.
- Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables begin to soften. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the chicken or vegetable broth and diced tomatoes (with their juices). Add the rinsed lentils, bay leaf, dried thyme, salt, and pepper. Stir everything together.
- Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender. Remove and discard the bay leaf.
- Stir in the fresh spinach or kale and cook for 2-3 minutes until wilted. Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with fresh chopped parsley, if desired, before serving hot.
Notes
- For a vegetarian option, use vegetable broth and omit the sausage.
- This soup freezes well for future meals.
