Instructions
- Grease a baking sheet or line it with parchment paper.
- In a large saucepan, combine granulated sugar, brown sugar, butter, heavy cream, and salt.
- Cook over medium heat, stirring constantly, until the butter is melted and the sugars are dissolved.
- Bring the mixture to a boil and cook, stirring occasionally, until it reaches 240°F (116°C) on a candy thermometer.
- Remove from heat and stir in the vanilla extract.
- Add the pecan halves and stir to coat them evenly.
- Drop spoonfuls of the mixture onto the prepared baking sheet.
- Let the pralines cool completely until firm.
