Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion, chopped
  • 1 (1.25 oz) packet taco seasoning
  • 1 (1 oz) packet ranch seasoning mix (dry)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 1 (8 oz) can tomato sauce
  • 2 cups water or beef broth
  • Optional toppings: shredded cheese, sour cream, crushed tortilla chips, avocado, fresh cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground beef or turkey with the chopped onion over medium heat. Drain any excess fat.
  2. Stir in the taco seasoning and ranch seasoning mix. Cook for 1 minute, stirring constantly.
  3. Add the black beans, pinto beans, corn, diced tomatoes, Rotel, tomato sauce, and water or beef broth to the pot. Stir to combine.
  4. Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 20-30 minutes to allow the flavors to meld. The longer it simmers, the more flavorful it will be.
  5. Ladle the hot soup into bowls and serve with your favorite toppings.
