Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 tbsp butter, divided
- 4 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 1 lb pasta (penne, fettuccine, or your favorite)
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt, pepper, and Italian seasoning. Remove chicken from skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan cheese until melted and smooth.
- Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
- Add the cooked chicken back to the skillet and toss to combine.
- Garnish with fresh parsley and serve immediately.
Notes
- For extra flavor, marinate the chicken in garlic butter for 30 minutes before cooking.
- Add a pinch of red pepper flakes for a little heat.
- Substitute cream cheese for Parmesan for a tangier sauce.
- Feel free to add vegetables like broccoli, spinach, or sun-dried tomatoes to the pasta.
