- 1.5 lbs steak, cut into 1-inch cubes
- 4 tbsp butter, melted
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/4 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, toss the steak cubes with olive oil, salt, pepper, thyme, rosemary, and red pepper flakes (if using).
- Heat a skillet over medium-high heat. Sear the steak bites in batches until browned on all sides. This step is important for flavor but don’t cook them through.
- Transfer the seared steak bites to your slow cooker.
- In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute, until fragrant, being careful not to burn the garlic.
- Pour the garlic butter sauce over the steak bites in the slow cooker.
- Cover and cook on low for 2-3 hours, or on high for 1-2 hours, or until the steak is tender. Cooking times may vary depending on your slow cooker.
- Garnish with fresh parsley before serving. Serve over rice, mashed potatoes, or your favorite side.
Notes
- For extra flavor, add a splash of Worcestershire sauce to the garlic butter sauce.
- You can use any cut of steak you prefer, such as sirloin, top round, or chuck roast.
- If you want a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
- To prevent the steak from drying out, don’t overcook it. Check for tenderness after the minimum cooking time.
