Instructions

  1. In a large bowl, toss the steak cubes with olive oil, salt, pepper, thyme, rosemary, and red pepper flakes (if using).
  2. Heat a skillet over medium-high heat. Sear the steak bites in batches until browned on all sides. This step is important for flavor but don’t cook them through.
  3. Transfer the seared steak bites to your slow cooker.
  4. In the same skillet, melt the butter and add the minced garlic. Cook for about 1 minute, until fragrant, being careful not to burn the garlic.
  5. Pour the garlic butter sauce over the steak bites in the slow cooker.
  6. Cover and cook on low for 2-3 hours, or on high for 1-2 hours, or until the steak is tender. Cooking times may vary depending on your slow cooker.

Notes

  • For extra flavor, add a splash of Worcestershire sauce to the garlic butter sauce.
  • You can use any cut of steak you prefer, such as sirloin, top round, or chuck roast.
  • If you want a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
