Description

A simple and flavorful one-pot meal featuring tender chicken, potatoes, garlic, and Parmesan cheese, cooked in your slow cooker for minimal effort.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the quartered baby red potatoes in the bottom of your slow cooker.
  2. In a small bowl, whisk together the chicken broth, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
  3. Pour the broth mixture over the potatoes.
  4. Add the chicken thighs on top of the potatoes.
  5. Dot the butter over the chicken.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  7. Before serving, shred the chicken with two forks directly in the slow cooker, or remove and shred, then return to the pot.
  8. Stir to combine everything.
  9. Garnish with fresh chopped parsley before serving.

Notes

  • For crispier potatoes, you can broil them for a few minutes after removing the chicken from the slow cooker.
  • Adjust seasonings to your preference.
