Description
A simple and flavorful one-pot meal featuring tender chicken, potatoes, garlic, and Parmesan cheese, cooked in your slow cooker for minimal effort.
Ingredients

 - 2 lbs boneless, skinless chicken thighs
- 1.5 lbs baby red potatoes, quartered
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Instructions
- Place the quartered baby red potatoes in the bottom of your slow cooker.
- In a small bowl, whisk together the chicken broth, grated Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- Pour the broth mixture over the potatoes.
- Add the chicken thighs on top of the potatoes.
- Dot the butter over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- Before serving, shred the chicken with two forks directly in the slow cooker, or remove and shred, then return to the pot.
- Stir to combine everything.
- Garnish with fresh chopped parsley before serving.
Notes
- For crispier potatoes, you can broil them for a few minutes after removing the chicken from the slow cooker.
- Adjust seasonings to your preference.
- This recipe is great for meal prepping; store leftovers in airtight containers in the refrigerator for up to 3 days.
