Instructions
- In a large bowl, whisk together the gluten-free flour blend, sugar (if using), and salt. Create a well in the center.
- In a separate bowl, whisk the eggs, milk, water, melted butter/coconut oil, and vanilla extract (if using).
- Gradually pour the wet ingredients into the dry ingredients, whisking continuously until smooth and no lumps remain. The batter should be thin.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours. This resting time helps the flour absorb the liquid and improves the crepe texture.
- Heat a lightly buttered 8-inch non-stick skillet or crepe pan over medium heat. Pour about 1/4 cup of batter into the center of the pan, tilting and swirling the pan immediately to spread the batter thinly and evenly over the entire surface.
- Cook for 1-2 minutes, or until the edges are lightly browned and the surface appears set. Gently loosen the edges with a spatula, then flip the crepe and cook for another 30-60 seconds, or until lightly golden.
- Transfer the cooked crepe to a plate. Repeat with the remaining batter, stacking the crepes as you go. You can place a piece of parchment paper between them to prevent sticking if desired.
- Serve warm with your favorite fillings such as fresh fruit, whipped cream, Nutella, jam, or savory options like ham and cheese.
