Description

A simple and flavorful gluten-free pasta dish featuring tender chicken in a rich garlic butter sauce. Perfect for a weeknight dinner.


Ingredients

  • 1 lb gluten-free pasta (penne or rotini recommended)
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/2 cup unsalted butter
  • 8 cloves garlic, minced
  • 1 cup chicken broth (gluten-free)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/2 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • 1 cup cherry tomatoes, halved (optional)
  • 1 cup fresh spinach (optional)

Instructions

  1. Cook the gluten-free pasta according to package directions until al dente. Drain, reserving 1 cup of the pasta water, and set aside.
  2. While pasta cooks, season the cubed chicken with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and Parmesan cheese. Continue to simmer for 3-5 minutes, or until the sauce slightly thickens.
  5. Return the cooked chicken to the skillet with the sauce. Add the cooked pasta, cherry tomatoes (if using), and fresh spinach (if using). Toss to coat everything evenly. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until it reaches your desired consistency.
  6. Stir in the fresh parsley. Taste and adjust seasoning with salt and pepper as needed. Serve immediately, topped with extra grated Parmesan cheese.

Notes

  • For a richer sauce, you can add an extra tablespoon of butter.
  • Feel free to add other vegetables like broccoli florets or mushrooms.
