Instructions

  1. In a small bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5-10 minutes, or until foamy.
  2. In a large bowl, whisk together gluten-free all-purpose flour, tapioca flour, almond flour, baking powder, and salt.
  3. Add olive oil and yogurt to the yeast mixture, stirring well.
  4. Pour the wet ingredients into the dry ingredients and mix with a spoon until a shaggy dough forms.
  5. Turn the dough out onto a lightly floured surface (using gluten-free flour) and knead gently for 2-3 minutes until smooth. The dough will be softer than traditional naan dough.
  6. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 45-60 minutes, or until doubled in size.
  7. Divide the dough into 6-8 equal pieces. Roll each piece into an oval or round shape about 1/4 inch thick.
  8. Heat a cast iron skillet or non-stick pan over medium-high heat. Brush a little olive oil on the pan.
  9. Cook each naan for 2-3 minutes per side, or until golden brown and puffed up. Brush with melted butter or garlic butter after cooking, if desired.
