Description

- 2 lbs Yukon Gold potatoes, cut into wedges
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken or vegetable broth (optional, for extra moisture)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large roasting pan.
- In a large bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
- Add the potato wedges to the bowl and toss to coat them evenly with the lemon-garlic mixture.
- Spread the coated potatoes in a single layer in the prepared roasting pan. If using, pour the broth over the potatoes.
- Roast for 35-45 minutes, or until the potatoes are tender and golden brown, flipping them halfway through. For extra crispiness, you can broil them for the last few minutes.
- Garnish with fresh chopped parsley before serving. Serve hot as a delicious side dish.
