Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large roasting pan.
  2. In a large bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss to coat them evenly with the lemon-garlic mixture.
  4. Spread the coated potatoes in a single layer in the prepared roasting pan. If using, pour the broth over the potatoes.
  5. Roast for 35-45 minutes, or until the potatoes are tender and golden brown, flipping them halfway through. For extra crispiness, you can broil them for the last few minutes.
