- 1 head of romaine lettuce
- 1 cup mixed greens
- 1 avocado
- 1/4 cup fresh parsley
- 1/4 cup fresh chives
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 cup water
- Salt and pepper to taste
Instructions
- Wash and chop the romaine lettuce and mixed greens.
- In a blender, combine avocado, parsley, chives, lemon juice, olive oil, and water. Blend until smooth.
- Season with salt and pepper.
- In a large bowl, combine the lettuce, mixed greens, and dressing. Toss gently to coat.
- Serve immediately.
