- 1.5 lbs skinless salmon fillets, finely chopped
- 1/4 cup panko breadcrumbs
- 1 large egg, lightly beaten
- 1/4 cup finely diced red onion
- 2 tablespoons fresh dill, chopped

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil, plus more for grilling
- 1/2 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 burger buns, toasted
- Green leaf lettuce
- Tomato slices
- Red onion slices
- Avocado slices
Instructions
- Prepare the Lemon-Dill Aioli: In a small bowl, whisk together mayonnaise, lemon juice, fresh dill, garlic powder, salt, and pepper. Cover and refrigerate.
- Prepare the Salmon Burgers: In a large bowl, combine the chopped salmon, panko breadcrumbs, beaten egg, diced red onion, fresh dill, lemon zest, salt, and pepper. Mix gently. Form the mixture into 4-6 equal-sized patties.
- Grill the Burgers: Preheat your grill to medium-high heat. Brush the grill grates with olive oil. Brush both sides of the salmon patties with olive oil.
- Place the salmon patties on the grill. Cook for 4-5 minutes per side, until golden brown and cooked through.
- Assemble the Burgers: Toast the burger buns on the grill. Spread aioli on the buns. Place a salmon burger on the bottom bun. Top with lettuce, tomato, red onion, and avocado slices. Add the top bun and serve.
Notes
- For gluten-free burgers, use gluten-free breadcrumbs.
- Avoid overmixing the salmon mixture to keep the burgers tender.
- Do not move the patties too much while grilling to allow a good crust to form.
