  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil, plus more for grilling
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 burger buns, toasted
  • Green leaf lettuce
  • Tomato slices
  • Red onion slices
  • Avocado slices

Instructions

  1. Prepare the Lemon-Dill Aioli: In a small bowl, whisk together mayonnaise, lemon juice, fresh dill, garlic powder, salt, and pepper. Cover and refrigerate.
  2. Prepare the Salmon Burgers: In a large bowl, combine the chopped salmon, panko breadcrumbs, beaten egg, diced red onion, fresh dill, lemon zest, salt, and pepper. Mix gently. Form the mixture into 4-6 equal-sized patties.
  3. Grill the Burgers: Preheat your grill to medium-high heat. Brush the grill grates with olive oil. Brush both sides of the salmon patties with olive oil.
  4. Place the salmon patties on the grill. Cook for 4-5 minutes per side, until golden brown and cooked through.
  5. Assemble the Burgers: Toast the burger buns on the grill. Spread aioli on the buns. Place a salmon burger on the bottom bun. Top with lettuce, tomato, red onion, and avocado slices. Add the top bun and serve.
