- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice
- 1/2 cup shredded cheddar cheese
Instructions
- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess fat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the diced tomatoes, beef broth, oregano, salt, and pepper. Bring to a simmer.
- Reduce heat and let simmer for 10 minutes, stirring occasionally.
- Stir in the cooked rice and heat through.
- Top with shredded cheddar cheese and let it melt before serving.
