Description
Enjoy these flavorful Ground Lamb Mediterranean Stuffed Peppers. They are packed with fresh herbs and spices for a healthy and delicious meal.
Ingredients

 - 1 pound ground lamb
 - 1 cup cooked rice
 - 1/2 cup chopped onion
 - 2 cloves garlic, minced
 - 1/2 cup chopped tomatoes
 - 1/4 cup chopped fresh parsley
 - 1/4 cup chopped fresh mint
 - 2 tablespoons olive oil
 - 1 teaspoon dried oregano
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 4 bell peppers (any color), halved and seeded
 - 1/2 cup crumbled feta cheese (optional)
 
Instructions
- Preheat oven to 375°F (190°C).
 - In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
 - Add ground lamb and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
 - Stir in cooked rice, tomatoes, parsley, mint, oregano, salt, and pepper. Mix well.
 - Stuff each bell pepper half with the lamb mixture.
 - Place stuffed peppers in a baking dish and add 1/2 inch of water to the bottom of the dish.
 - Cover with foil and bake for 30 minutes.
 - Remove foil and bake for another 15-20 minutes, or until peppers are tender.
 - If desired, sprinkle with feta cheese before serving.
 
Notes
- For a spicier flavor, add a pinch of red pepper flakes to the lamb mixture.
 - You can use any color bell peppers you like.
 - These stuffed peppers can be made ahead of time and baked later.
 - Serve with a dollop of Greek yogurt or tzatziki sauce.
