Ingredients

  • 1 pound ground lamb
  • 1 cup cooked rice
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 bell peppers (any color), halved and seeded
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add ground lamb and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  4. Stir in cooked rice, tomatoes, parsley, mint, oregano, salt, and pepper. Mix well.
  5. Stuff each bell pepper half with the lamb mixture.
  6. Place stuffed peppers in a baking dish and add 1/2 inch of water to the bottom of the dish.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for another 15-20 minutes, or until peppers are tender.
  9. If desired, sprinkle with feta cheese before serving.

Notes

  • For a spicier flavor, add a pinch of red pepper flakes to the lamb mixture.
  • You can use any color bell peppers you like.
  • These stuffed peppers can be made ahead of time and baked later.
  • Serve with a dollop of Greek yogurt or tzatziki sauce.
