- 1 pound ground turkey
- 2 medium zucchini, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup shredded cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in garlic, zucchini, diced tomatoes, oregano, basil, and red pepper flakes (if using). Season with salt and pepper.
- Bring to a simmer, then reduce heat and cook for 10-15 minutes, or until zucchini is tender.
- Sprinkle with cheese (if using) and serve.
Notes
- For extra flavor, add a splash of balsamic vinegar or Worcestershire sauce.
- Serve over rice, quinoa, or pasta for a complete meal.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
