A simple and healthy sheet pan meal perfect for meal prepping. This recipe features chicken and colorful vegetables seasoned with lemon and herbs, all cooked on a single baking sheet.

 - 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 lb broccoli florets
- 1 red bell pepper, cored and cut into 1-inch pieces
- 1 cup cherry tomatoes
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- Juice of 1 large lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley or dill, chopped, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Whisk together.
- Add the cubed chicken, broccoli florets, red bell pepper, cherry tomatoes, and red onion wedges to the bowl. Toss to coat everything evenly.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- Remove from oven, garnish with fresh parsley or dill if desired. Serve immediately or cool for meal prepping.
