- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 6 tablespoons melted butter
- 2 (8 ounce) packages cream cheese, softened
- 1 1/2 cups pumpkin puree
- 1 cup sugar
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9×13 inch baking dish.
- In a large bowl, beat cream cheese until smooth. Add pumpkin puree, 1 cup sugar, pumpkin pie spice, and vanilla extract. Mix well.
- Beat in eggs one at a time until just combined. Pour over the crust.
- Bake for 30-35 minutes, or until set. Let cool completely before cutting into bars.
Notes
- For a smoother cheesecake, ensure cream cheese is fully softened.
