Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess fat.
  2. Add the chopped onion, diced carrots, and diced celery to the pot. Cook until the vegetables are tender, about 5-7 minutes.
  3. Stir in the minced garlic, dried oregano, and dried basil. Cook for another minute until fragrant.
  4. Pour in the beef broth and crushed tomatoes. Bring to a simmer.
  5. Add the drained kidney beans and corn to the pot. Stir well.
  6. Season with salt and pepper to taste.
  7. Reduce the heat to low, cover, and let the soup simmer for at least 30 minutes to allow the flavors to meld. For a richer flavor, simmer for up to 1-2 hours.
  8. Serve hot and enjoy.

Notes

  • For a vegetarian option, omit the ground beef and use vegetable broth.
  • Add a bay leaf while simmering for extra flavor, and remove before serving.
