- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess fat.
- Add the chopped onion, diced carrots, and diced celery to the pot. Cook until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic, dried oregano, and dried basil. Cook for another minute until fragrant.
- Pour in the beef broth and crushed tomatoes. Bring to a simmer.
- Add the drained kidney beans and corn to the pot. Stir well.
- Season with salt and pepper to taste.
- Reduce the heat to low, cover, and let the soup simmer for at least 30 minutes to allow the flavors to meld. For a richer flavor, simmer for up to 1-2 hours.
- Serve hot and enjoy.
Notes
- For a vegetarian option, omit the ground beef and use vegetable broth.
- Add a bay leaf while simmering for extra flavor, and remove before serving.
- Serve with a dollop of sour cream or a sprinkle of shredded cheese.
