- 1 tbsp olive oil
- 1 lb lean ground beef (90% lean or higher)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (8 oz) can tomato sauce
- 1 cup beef broth
- 1/2 cup light cream cheese, softened
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz high-protein pasta, cooked al dente
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
- Add onion and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Simmer, then reduce heat, cover, and cook for 10-15 minutes.
- Remove from heat. Stir in cream cheese until melted and smooth. Stir in Parmesan cheese.
- Add cooked pasta to the skillet and toss to coat.
- Serve garnished with parsley and extra Parmesan cheese.
Notes
- For a richer flavor, you can use regular cream cheese.
