Ingredients

  • 1 tbsp olive oil
  • 1 lb lean ground beef (90% lean or higher)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (8 oz) can tomato sauce
  • 1 cup beef broth
  • 1/2 cup light cream cheese, softened
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 oz high-protein pasta, cooked al dente
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper. Simmer, then reduce heat, cover, and cook for 10-15 minutes.
  4. Remove from heat. Stir in cream cheese until melted and smooth. Stir in Parmesan cheese.
  5. Add cooked pasta to the skillet and toss to coat.
  6. Serve garnished with parsley and extra Parmesan cheese.
