- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp cayenne (optional)
- Salt and pepper to taste
- 1 large onion, thinly sliced
Instructions
- In a bowl, whisk olive oil, lemon juice, garlic, and all spices. Add chicken and toss to coat. Marinate for at least 1 hour (or overnight for max flavor).
- Heat a skillet or grill pan over medium-high. Add sliced onions and cook until slightly softened, about 3 minutes. Push to the side.
- Add chicken in a single layer. Cook 5-6 minutes per side until golden and cooked through.
- Let chicken rest 5 minutes, then slice thinly against the grain.
- Serve warm with pita, garlic sauce, fresh veggies, and a sprinkle of parsley.
