Description
An easy and flavorful sheet pan dinner featuring sausage, sweet potatoes, honey, and garlic. Perfect for weeknights or meal prep.
Ingredients

 - 1.5 lbs smoked sausage, sliced
- 2 large sweet potatoes, cubed
- 1 red onion, cut into wedges
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the cubed sweet potatoes and red onion wedges with olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
- Roast for 20 minutes.
- While the vegetables roast, whisk together the minced garlic, honey, soy sauce, and rosemary in a small bowl.
- Add the sliced sausage to the baking sheet with the sweet potatoes and onions. Pour the honey garlic sauce over everything and toss to coat.
- Return the baking sheet to the oven and roast for another 15-20 minutes, or until the sausage is browned and the sweet potatoes are tender.
- Serve hot.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- This recipe is great for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
- Feel free to add other vegetables like broccoli florets or bell peppers during the last 15-20 minutes of cooking.
