Ingredients

  • 1.5 lbs smoked sausage, sliced
  • 2 large sweet potatoes, cubed
  • 1 red onion, cut into wedges
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes and red onion wedges with olive oil, salt, and pepper. Spread them in a single layer on a large baking sheet.
  3. Roast for 20 minutes.
  4. While the vegetables roast, whisk together the minced garlic, honey, soy sauce, and rosemary in a small bowl.
  5. Add the sliced sausage to the baking sheet with the sweet potatoes and onions. Pour the honey garlic sauce over everything and toss to coat.
  6. Return the baking sheet to the oven and roast for another 15-20 minutes, or until the sausage is browned and the sweet potatoes are tender.
  7. Serve hot.
