A simple and flavorful one-pan dinner featuring sausage and roasted vegetables coated in a sweet and savory honey garlic sauce.

- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 1 head broccoli, cut into florets
- 1 red bell pepper, cored and chopped into 1-inch pieces
- 1 yellow bell pepper, cored and chopped into 1-inch pieces
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/4 cup honey
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tbsp apple cider vinegar
- 1/2 tsp ginger powder
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Combine sausage, broccoli, bell peppers, and red onion in a large bowl. Add olive oil, salt, and pepper. Toss to coat evenly.
- Spread the sausage and vegetables in a single layer on the baking sheet.
- Roast for 15-20 minutes, until vegetables are tender-crisp and sausage is browned.
- While roasting, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and ginger powder in a small bowl.
- Remove the baking sheet from the oven. Drizzle the honey garlic sauce over the sausage and vegetables. Toss gently to coat.
- Return the baking sheet to the oven. Roast for another 5-10 minutes, until the sauce thickens and caramelizes.
- Serve hot.
Notes
- Garnish with fresh parsley or sesame seeds if desired.
- Use tamari instead of soy sauce for a gluten-free option.
