Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, cored and chopped into 1-inch pieces
  • 1 yellow bell pepper, cored and chopped into 1-inch pieces
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/4 cup honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • 1/2 tsp ginger powder

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Combine sausage, broccoli, bell peppers, and red onion in a large bowl. Add olive oil, salt, and pepper. Toss to coat evenly.
  3. Spread the sausage and vegetables in a single layer on the baking sheet.
  4. Roast for 15-20 minutes, until vegetables are tender-crisp and sausage is browned.
  5. While roasting, whisk together honey, soy sauce, minced garlic, apple cider vinegar, and ginger powder in a small bowl.
  6. Remove the baking sheet from the oven. Drizzle the honey garlic sauce over the sausage and vegetables. Toss gently to coat.
  7. Return the baking sheet to the oven. Roast for another 5-10 minutes, until the sauce thickens and caramelizes.
  8. Serve hot.
