- 2 medium sweet potatoes, cubed
- 2 tbsp olive oil
- 1/4 cup hot honey
- 1 tbsp soy sauce
- 1 tsp garlic powder
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
- While sweet potatoes are roasting, cook ground beef in a skillet over medium heat. Drain any excess fat.
- In a small bowl, whisk together hot honey, soy sauce, and garlic powder.
- Add the hot honey mixture to the cooked beef and stir to coat.
- Assemble bowls with rice or quinoa, roasted sweet potatoes, and hot honey beef.
