Description

Ingredients

  • 5 medium potatoes, peeled and thinly sliced
  • 1 lb cooked ham, diced
  • 1 medium onion, thinly sliced
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 3 cups milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 2 cups shredded cheddar cheese

Instructions

  1. Place sliced potatoes, ham, and onion in the Instant Pot.
  2. In a saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, stirring constantly until thickened.
  3. Stir in salt, pepper, and garlic powder. Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.
  4. Pour cheese sauce over the potato mixture in the Instant Pot.
  5. Secure the lid and set the Instant Pot to manual high pressure for 8 minutes. Followed by a 10 minute natural pressure release.
  6. Carefully release any remaining pressure. Stir in the remaining 1/2 cup of cheese.
  7. Let stand for a few minutes before serving.

Notes

  • For a richer flavor, use heavy cream instead of milk.
  • Add a pinch of nutmeg to the cheese sauce for extra warmth.
  • If you don’t have ham, cooked bacon or sausage can be substituted.
