- 5 medium potatoes, peeled and thinly sliced
- 1 lb cooked ham, diced
- 1 medium onion, thinly sliced
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 3 cups milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
- 2 cups shredded cheddar cheese
Instructions
- Place sliced potatoes, ham, and onion in the Instant Pot.
- In a saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually add milk, stirring constantly until thickened.
- Stir in salt, pepper, and garlic powder. Remove from heat and stir in 1 1/2 cups of cheddar cheese until melted.
- Pour cheese sauce over the potato mixture in the Instant Pot.
- Secure the lid and set the Instant Pot to manual high pressure for 8 minutes. Followed by a 10 minute natural pressure release.
- Carefully release any remaining pressure. Stir in the remaining 1/2 cup of cheese.
- Let stand for a few minutes before serving.
Notes
- For a richer flavor, use heavy cream instead of milk.
- Add a pinch of nutmeg to the cheese sauce for extra warmth.
- If you don’t have ham, cooked bacon or sausage can be substituted.
