Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest (from about 1 lemon)
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 1 tsp of baking powder, 1/2 tsp of baking soda, and 1/4 tsp of salt.
  3. Cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
  4. Beat in 1 large egg, 1 tbsp of lemon zest, 2 tbsp of fresh lemon juice, and 1 tsp of vanilla extract.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Scoop out portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden, then cool on a wire rack.
  8. Prepare the glaze by whisking together 1 cup of powdered sugar and 2-3 tbsp of fresh lemon juice until smooth, then drizzle over cooled cookies.
