- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 1 tsp of baking powder, 1/2 tsp of baking soda, and 1/4 tsp of salt.
- Cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Beat in 1 large egg, 1 tbsp of lemon zest, 2 tbsp of fresh lemon juice, and 1 tsp of vanilla extract.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Scoop out portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden, then cool on a wire rack.
- Prepare the glaze by whisking together 1 cup of powdered sugar and 2-3 tbsp of fresh lemon juice until smooth, then drizzle over cooled cookies.
