- 1 lb ground beef
- 1 small onion, chopped

- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the bell peppers in half lengthwise and remove the seeds and membranes.
- In a skillet, brown the ground beef with the chopped onion until cooked through. Drain off any excess grease.
- Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for 1 minute more.
- Remove the skillet from the heat and stir in the shredded cheddar cheese, sour cream, and salsa.
- Spoon the beef mixture evenly into the prepared bell pepper halves.
- Place the stuffed peppers in a baking dish.
- Bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.
- Serve hot.
