- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 9 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Brown ground beef in a large pot over medium-high heat. Drain excess grease.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, tomato sauce, beef broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add lasagna noodles and cook until tender, about 10-12 minutes.
- In a small bowl, combine ricotta cheese and Parmesan cheese.
- Ladle soup into bowls and top with a spoonful of the ricotta mixture and fresh basil.
Notes
- For a richer flavor, use Italian sausage instead of ground beef.
- Add vegetables like bell peppers or zucchini for extra nutrients.
- Adjust the amount of beef broth to reach your desired consistency.
