- 4 large bell peppers (various colors)
- 1 pound ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 15 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 8 ounces mozzarella cheese, shredded
Instructions
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise and remove seeds and membranes.
- In a large skillet, brown ground beef or sausage over medium heat. Drain any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- In a separate bowl, combine ricotta cheese, Parmesan cheese, parsley, and egg. Mix well.
- Spoon ricotta mixture into each bell pepper half.
- Top with meat sauce and shredded mozzarella cheese.
- Place stuffed bell peppers in a baking dish and bake for 30-40 minutes, or until peppers are tender and cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- For a vegetarian option, omit the meat and add more vegetables like mushrooms, zucchini, or spinach to the tomato sauce.
- You can prepare the stuffed peppers ahead of time and store them in the refrigerator until ready to bake.
