Description
A delicate and fragrant lavender cake perfect for special occasions.
Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 4 large eggs
- 1 cup milk
- 2 teaspoons dried culinary lavender buds, finely ground
- 1 teaspoon vanilla extract
- Purple food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the softened butter and mix on low speed until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the eggs, milk, ground lavender, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing on low speed until just combined. Do not overmix.
- If using, add a few drops of purple food coloring and mix until evenly distributed.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- Frost with your favorite homemade frosting once cooled.
Notes
- Ensure you use culinary-grade lavender.
- For a stronger lavender flavor, steep 1 tablespoon of lavender buds in the milk for 30 minutes, then strain before using.
- This cake pairs well with a cream cheese frosting or a simple vanilla buttercream.
