Instructions

  1. In a medium bowl, combine the crumbled leftover stuffing, beaten egg, flour, parsley, and black pepper. Mix until well combined. If the mixture seems too dry, add 1-2 tablespoons of water until it holds together when pressed.
  2. Form the stuffing mixture into small patties, about 2-3 inches in diameter and 1/2 inch thick.
  3. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the stuffing patties, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, or until golden brown and crispy.
  4. While the fritters are cooking, prepare the cranberry aioli. In a small bowl, whisk together the mayonnaise, cranberry sauce, lemon juice, and garlic powder. Season with salt and pepper to taste.
  5. Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. Serve the warm leftover stuffing fritters with a dollop of cranberry aioli.
