  • Juice of ½ lemon
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, vanilla extract, lemon zest, and lemon juice until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine. Gently fold in the blueberries.
  5. Divide the batter evenly among the 12 muffin cups. They should be about two-thirds full.
  6. Bake for 18-22 minutes, or until the tops are golden brown and a wooden skewer inserted into the center of a muffin comes out clean.
