- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, butter, and powdered sugar until crumbly.
- Press mixture into the bottom of an ungreased 8×8 inch baking pan.
- Bake for 15-20 minutes, or until lightly golden.
- In another bowl, whisk eggs, granulated sugar, lemon juice, flour, and baking powder until smooth.
- Pour over the baked crust.
- Bake for 20-25 minutes, or until set.
- Let cool completely before cutting into squares.
- Dust with powdered sugar before serving.
Notes
- For a more intense lemon flavor, add lemon zest to the filling.
