Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In a separate medium bowl, cream together the softened butter, milk, eggs, lime zest, lime juice, poppy seeds, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing on low speed until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
