- 1 pound cooked lobster meat, chopped
- 4 tablespoons butter
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1/2 cup all-purpose flour
- 6 cups seafood stock
- 1 cup heavy cream
- 1/4 cup sherry
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more. Stir in flour and cook for 1 minute, creating a roux.
- Gradually whisk in seafood stock until smooth. Add tomato paste and paprika. Bring to a simmer.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Stir in lobster meat and sherry. Cook for 5 minutes.
- Remove from heat and stir in heavy cream. Season with salt and pepper.
- Garnish with fresh chives before serving.
Notes
- For a smoother bisque, use an immersion blender to blend the soup before adding the lobster meat and cream.
- Adjust the amount of sherry to your preference.
- Serve with crusty bread for dipping.
