  • 1 cup heavy cream

Instructions

  1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more. Stir in flour and cook for 1 minute, creating a roux.
  3. Gradually whisk in seafood stock until smooth. Add tomato paste and paprika. Bring to a simmer.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Stir in lobster meat and sherry. Cook for 5 minutes.
  6. Remove from heat and stir in heavy cream. Season with salt and pepper.
