Hearty Sausage & Egg Breakfast Casserole

Description

A make-ahead breakfast casserole with sausage, eggs, cheese, and bread, perfect for busy mornings or weekend brunches.


Ingredients

  • 1 lb breakfast sausage, cooked and drained
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese, divided
  • 4 slices bread, crusts removed, cubed
  • 1/2 cup chopped bell pepper (any color)
  • 1/4 cup chopped onion

Instructions

  1. Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Stir in the cooked sausage, 1 cup of cheddar cheese, cubed bread, bell pepper, and onion.
  4. Pour the mixture into the prepared baking dish.
  5. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  6. When ready to bake, preheat oven to 350°F (175°C).
  7. Remove casserole from refrigerator and let sit at room temperature for 15-20 minutes while the oven heats.
  8. Bake uncovered for 30-35 minutes, or until set.
  9. Sprinkle the remaining 1 cup of cheddar cheese over the top and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  10. Let stand for a few minutes before serving.

Notes

  • This casserole can be assembled the night before for a quick morning meal.
  • For a different flavor, you can substitute other cheeses like Monterey Jack or a Colby blend.
