Description
A make-ahead breakfast casserole with sausage, eggs, cheese, and bread, perfect for busy mornings or weekend brunches.
Ingredients

 - 1 lb breakfast sausage, cooked and drained
- 6 large eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups shredded cheddar cheese, divided
- 4 slices bread, crusts removed, cubed
- 1/2 cup chopped bell pepper (any color)
- 1/4 cup chopped onion
Instructions
- Grease a 9×13 inch baking dish.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Stir in the cooked sausage, 1 cup of cheddar cheese, cubed bread, bell pepper, and onion.
- Pour the mixture into the prepared baking dish.
- Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
- When ready to bake, preheat oven to 350°F (175°C).
- Remove casserole from refrigerator and let sit at room temperature for 15-20 minutes while the oven heats.
- Bake uncovered for 30-35 minutes, or until set.
- Sprinkle the remaining 1 cup of cheddar cheese over the top and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- This casserole can be assembled the night before for a quick morning meal.
- For a different flavor, you can substitute other cheeses like Monterey Jack or a Colby blend.
