Description
A comforting and easy chicken and stuffing casserole made in your slow cooker, perfect for busy weeknights or make-ahead meals.
Ingredients

 - 1.5–2 lbs boneless, skinless chicken breasts
- 1 (6 ounce) box stuffing mix (chicken or savory flavor)
- 1 (10.5 ounce) can cream of chicken soup
- 1 (10.5 ounce) can cream of mushroom soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/4 cup unsalted butter, melted
- 1 tsp poultry seasoning
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 cup frozen peas and carrots (optional)
Instructions
- Lightly grease your slow cooker.
- Season chicken breasts with salt, pepper, poultry seasoning, and garlic powder. Place chicken in a single layer at the bottom of the slow cooker.
- In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, and sour cream until smooth. Pour half of this mixture over the chicken.
- Sprinkle the dry stuffing mix evenly over the chicken and soup mixture. Scatter frozen vegetables over the stuffing if using.
- Pour the remaining soup mixture over the stuffing. Drizzle the melted butter evenly over the top layer of stuffing.
- Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is cooked through and easily shreddable.
- Shred the chicken in the slow cooker with two forks, then stir everything together to combine the chicken and stuffing.
- Serve warm.
Notes
- This dish is excellent for making ahead; simply refrigerate leftovers and reheat.
