Description

A comforting and easy chicken and stuffing casserole made in your slow cooker, perfect for busy weeknights or make-ahead meals.


Ingredients

Scale
  • 1.52 lbs boneless, skinless chicken breasts
  • 1 (6 ounce) box stuffing mix (chicken or savory flavor)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1 tsp poultry seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup frozen peas and carrots (optional)

Instructions

  1. Lightly grease your slow cooker.
  2. Season chicken breasts with salt, pepper, poultry seasoning, and garlic powder. Place chicken in a single layer at the bottom of the slow cooker.
  3. In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, and sour cream until smooth. Pour half of this mixture over the chicken.
  4. Sprinkle the dry stuffing mix evenly over the chicken and soup mixture. Scatter frozen vegetables over the stuffing if using.
  5. Pour the remaining soup mixture over the stuffing. Drizzle the melted butter evenly over the top layer of stuffing.
  6. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is cooked through and easily shreddable.
  7. Shred the chicken in the slow cooker with two forks, then stir everything together to combine the chicken and stuffing.
  8. Serve warm.
