- 1.5 lbs boneless, skinless chicken breasts, sliced in half horizontally or pounded thin
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and sliced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped, plus more for garnish
- 1/2 cup fresh spinach, optional
- Red pepper flakes, to taste, optional
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and oregano.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Reduce heat to medium-low and stir in Parmesan cheese until melted and sauce thickens slightly. Add red pepper flakes if using.
- Return chicken to the skillet. If using spinach, stir it in now until wilted. Simmer for 2-3 minutes to allow chicken to warm through and absorb the sauce.
- Stir in fresh basil just before serving. Garnish with additional fresh basil.
- Serve immediately with pasta, rice, or crusty bread.
