Description

A creamy and irresistible chicken dish perfect for a romantic dinner or special occasion.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, sliced in half horizontally or pounded thin
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and sliced
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped, plus more for garnish
  • 1/2 cup fresh spinach, optional
  • Red pepper flakes, to taste, optional

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and oregano.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook for 4-6 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Reduce heat to medium-low and stir in Parmesan cheese until melted and sauce thickens slightly. Add red pepper flakes if using.
  6. Return chicken to the skillet. If using spinach, stir it in now until wilted. Simmer for 2-3 minutes to allow chicken to warm through and absorb the sauce.
  7. Stir in fresh basil just before serving. Garnish with additional fresh basil.
  8. Serve immediately with pasta, rice, or crusty bread.
