Description

A creamy and flavorful one-pot orzo dish with chicken.


Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp sun-dried tomatoes, oil-packed, drained and chopped
  • 1 tbsp fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from pot and set aside.
  3. Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and liquid is absorbed.
  5. Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and basil. Season with salt and pepper to taste.
  6. Return chicken to the pot and heat through.
  7. Serve immediately.

Notes

  • For extra flavor, add a splash of white wine to the pot when cooking the vegetables.
  • Garnish with extra Parmesan cheese and fresh basil before serving.
