Description
A creamy and flavorful one-pot orzo dish with chicken.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp sun-dried tomatoes, oil-packed, drained and chopped
- 1 tbsp fresh basil, chopped
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from pot and set aside.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, sun-dried tomatoes, and basil. Season with salt and pepper to taste.
- Return chicken to the pot and heat through.
- Serve immediately.
Notes
- For extra flavor, add a splash of white wine to the pot when cooking the vegetables.
- Garnish with extra Parmesan cheese and fresh basil before serving.
