- 1.5 pounds boneless, skinless chicken breasts, cooked and diced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, diced chicken, sun-dried tomatoes, Parmesan cheese, and basil.
- In a separate small bowl, whisk together the heavy cream, minced garlic, olive oil, red pepper flakes (if using), salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Taste and adjust seasoning as needed.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
