Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side, until golden. Remove and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in sun-dried tomatoes, chicken broth, and heavy cream. Bring to a simmer.
- Return chicken to the skillet. Simmer for 5-7 minutes, or until chicken is cooked through.
- Stir in Parmesan cheese and basil. Season with salt and pepper to taste.
- Serve immediately.

- Serve with pasta, rice, or crusty bread.
- Garnish with extra basil.
