Description

A comforting and easy chicken dish.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side, until golden. Remove and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in sun-dried tomatoes, chicken broth, and heavy cream. Bring to a simmer.
  5. Return chicken to the skillet. Simmer for 5-7 minutes, or until chicken is cooked through.
  6. Stir in Parmesan cheese and basil. Season with salt and pepper to taste.
  7. Serve immediately.
