- 1 lb chicken breast, cooked and shredded
- 1 (20 oz) package cheese tortellini
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook tortellini according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add sun-dried tomatoes, shredded chicken, heavy cream, and chicken broth to the skillet. Season with salt and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Add cooked tortellini to the skillet and toss to coat with the sauce.
- Stir in fresh basil and Parmesan cheese. Serve immediately.
Notes
- Adjust the amount of heavy cream and chicken broth to achieve your desired sauce consistency.
- Add a pinch of red pepper flakes for a spicy kick.
- Serve with a side of garlic bread or a simple salad.
