A creamy and flavorful soup featuring chicken, tortellini, and a rich broth.
Ingredients

- 1 lb chicken breast, cooked and shredded
- 1 package cheese tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large pot, combine chicken broth, sun-dried tomatoes, garlic, oregano, and red pepper flakes (if using). Bring to a simmer.
- Add cheese tortellini and cook according to package directions.
- Stir in shredded chicken and heavy cream. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese.
Notes
- For a thicker soup, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) to the simmering broth.
- You can use spinach or kale for added nutrients. Stir in during the last few minutes of cooking.
