Description

A creamy and flavorful soup featuring chicken, tortellini, and a rich broth.


Ingredients

Scale
  • 1 lb chicken breast, cooked and shredded
  • 1 package cheese tortellini
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine chicken broth, sun-dried tomatoes, garlic, oregano, and red pepper flakes (if using). Bring to a simmer.
  2. Add cheese tortellini and cook according to package directions.
  3. Stir in shredded chicken and heavy cream. Heat through, but do not boil.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with Parmesan cheese.

Notes

  • For a thicker soup, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp cold water) to the simmering broth.
  • You can use spinach or kale for added nutrients. Stir in during the last few minutes of cooking.
