Ingredients

  • 4 (6-ounce) salmon fillets, skin on or off
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Pat the salmon fillets dry with paper towels and season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Place the salmon fillets in the skillet, skin-side down if using skin-on fillets, and sear for 4-5 minutes, or until golden brown and crispy.
  4. Flip the salmon fillets and cook for another 3-4 minutes, or until cooked through. Remove the salmon from the skillet and set aside.
  5. In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
  6. Pour in the white wine and let it simmer for 2-3 minutes, or until reduced by half.
  7. Stir in the heavy cream and Parmesan cheese. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened slightly.
  8. Stir in the dill and lemon juice. Season with salt and pepper to taste.
  9. Return the salmon fillets to the skillet and spoon the sauce over them.
  10. Serve immediately.
