- 4 (6-ounce) salmon fillets, skin on or off
- 2 tablespoons olive oil
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Place the salmon fillets in the skillet, skin-side down if using skin-on fillets, and sear for 4-5 minutes, or until golden brown and crispy.
- Flip the salmon fillets and cook for another 3-4 minutes, or until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
- Pour in the white wine and let it simmer for 2-3 minutes, or until reduced by half.
- Stir in the heavy cream and Parmesan cheese. Bring to a simmer and cook for 2-3 minutes, or until the sauce has thickened slightly.
- Stir in the dill and lemon juice. Season with salt and pepper to taste.
- Return the salmon fillets to the skillet and spoon the sauce over them.
- Serve immediately.
