Ingredients

  • 1 pound pasta (linguine or fettuccine recommended)
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add remaining 2 tablespoons of butter to the skillet. Add garlic and red pepper flakes (if using) and cook until fragrant, about 1 minute.
  4. Pour in white wine and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream and Parmesan cheese. Bring to a simmer and cook until sauce has thickened slightly, about 3-5 minutes.
  6. Season sauce with salt and pepper to taste.
  7. Add cooked pasta and shrimp to the skillet. Toss to coat. If sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  8. Stir in parsley. Serve immediately.

  • For a richer flavor, use shrimp stock instead of white wine.
  • Add sun-dried tomatoes or spinach for extra flavor and nutrients.
