Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 cup Kalamata olives, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Instructions
- Rinse the quinoa in a fine-mesh sieve.
- Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until water is absorbed.
- Fluff quinoa with a fork and let it cool slightly.
- In a large bowl, combine the cooked quinoa, cucumber, bell pepper, olives, red onion, parsley, and mint.
- In a small bowl, whisk together olive oil and lemon juice. Season with salt and pepper.
- Pour dressing over the quinoa mixture and toss to combine.
- Serve immediately or chill for later.

- Adjust the amount of lemon juice and olive oil to your preference.
- Add feta cheese for extra flavor.
