- 2 lbs baby potatoes, quartered
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Boil the potatoes until tender. Drain and let cool slightly.
- In a large bowl, combine the cooled potatoes, olives, cherry tomatoes, and red onion.
- In a small bowl, whisk together the olive oil, lemon juice, and Dijon mustard.
- Pour the dressing over the potato mixture.
- Add the parsley and dill.
- Season with salt and pepper.
- Toss gently to combine.
- Chill before serving.
Notes
- For a creamier salad, you can add a tablespoon of Greek yogurt or mayonnaise.
- Adjust lemon juice and salt to your preference.
