Description

A vibrant and flavorful pasta salad inspired by Mexican street corn.


Ingredients

Scale
  • 1 pound pasta
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and cumin.
  3. Season with salt and pepper to taste.
  4. Toss gently to combine all ingredients.
  5. Chill for at least 30 minutes before serving.
