Description
A vibrant and flavorful pasta salad inspired by Mexican street corn.
Ingredients
Scale
- 1 pound pasta
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup crumbled cotija cheese
- 2 tablespoons chopped cilantro
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, corn, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and cumin.
- Season with salt and pepper to taste.
- Toss gently to combine all ingredients.
- Chill for at least 30 minutes before serving.
Notes
- For extra spice, add a diced jalapeño.
- Garnish with additional cilantro and cotija cheese.
