Description
A fun and viral breakfast treat made with tiny pancakes served like cereal.
Ingredients
Scale
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons melted unsalted butter, plus more for greasing pan
- 1 large egg
- 1 teaspoon vanilla extract
- Optional toppings: maple syrup, fresh berries, chocolate chips, whipped cream, sprinkles
Instructions
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Whisk together milk, melted butter, egg, and vanilla extract in a separate medium bowl.
- Pour wet ingredients into dry ingredients and whisk until just combined; a few lumps are acceptable.
- Heat a large non-stick skillet or griddle over medium-low heat and lightly grease with butter.
- Transfer batter to a squeeze bottle or a Ziploc bag with a small corner snipped off.
- Squeeze small dots of batter (about 1/2 inch in diameter) onto the hot skillet. Cook for 1-2 minutes until small bubbles appear and edges are set.
- Flip mini pancakes and cook for another 30-60 seconds until golden brown and cooked through.
- Remove cooked mini pancakes and place in a bowl. Repeat with remaining batter, greasing skillet as needed.
- Gather all pancakes in a serving bowl. Pour milk over them and add your favorite toppings. Serve immediately.
Notes
- Use a squeeze bottle or a Ziploc bag with a small corner snipped off for easy pouring of small pancake dots.
- Do not overmix the pancake batter. A few lumps are okay.
