Description

A fun and viral breakfast treat made with tiny pancakes served like cereal.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted unsalted butter, plus more for greasing pan
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Optional toppings: maple syrup, fresh berries, chocolate chips, whipped cream, sprinkles

Instructions

  1. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  2. Whisk together milk, melted butter, egg, and vanilla extract in a separate medium bowl.
  3. Pour wet ingredients into dry ingredients and whisk until just combined; a few lumps are acceptable.
  4. Heat a large non-stick skillet or griddle over medium-low heat and lightly grease with butter.
  5. Transfer batter to a squeeze bottle or a Ziploc bag with a small corner snipped off.
  6. Squeeze small dots of batter (about 1/2 inch in diameter) onto the hot skillet. Cook for 1-2 minutes until small bubbles appear and edges are set.
  7. Flip mini pancakes and cook for another 30-60 seconds until golden brown and cooked through.
  8. Remove cooked mini pancakes and place in a bowl. Repeat with remaining batter, greasing skillet as needed.
  9. Gather all pancakes in a serving bowl. Pour milk over them and add your favorite toppings. Serve immediately.

Notes

  • Use a squeeze bottle or a Ziploc bag with a small corner snipped off for easy pouring of small pancake dots.
  • Do not overmix the pancake batter. A few lumps are okay.
