Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan, or place a wire rack on a baking sheet and set aside.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, beaten egg, chopped onion, bell pepper (if using), minced garlic, salt, black pepper, Italian seasoning, and 1/4 cup ketchup. Use your hands to gently mix until all ingredients are just combined. Do not overmix.
  3. Press the meatloaf mixture into the prepared loaf pan, or form it into an even loaf shape on the wire rack on the baking sheet.
  4. In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, brown sugar, apple cider vinegar, and Dijon mustard.
  5. Spread about half of the glaze evenly over the top of the meatloaf.
  6. Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer. During the last 15-20 minutes of baking, spread the remaining glaze over the meatloaf.
  7. Once baked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing and serving.
