- 2 lbs ground beef (80/20 or 85/15)
- 1 cup breadcrumbs (plain or panko)
- 1/2 cup milk
- 1 large egg, beaten
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper (optional)
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried Italian seasoning
- 1/4 cup ketchup (for meatloaf mixture)
- 1/2 cup ketchup (for glaze)
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan, or place a wire rack on a baking sheet and set aside.
- In a large bowl, combine the ground beef, breadcrumbs, milk, beaten egg, chopped onion, bell pepper (if using), minced garlic, salt, black pepper, Italian seasoning, and 1/4 cup ketchup. Use your hands to gently mix until all ingredients are just combined. Do not overmix.
- Press the meatloaf mixture into the prepared loaf pan, or form it into an even loaf shape on the wire rack on the baking sheet.
- In a small bowl, whisk together the glaze ingredients: 1/2 cup ketchup, brown sugar, apple cider vinegar, and Dijon mustard.
- Spread about half of the glaze evenly over the top of the meatloaf.
- Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C) when measured with a meat thermometer. During the last 15-20 minutes of baking, spread the remaining glaze over the meatloaf.
- Once baked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing and serving.
Notes
- Do not overmix the meatloaf mixture to avoid a tough texture.
- Resting the meatloaf after baking helps redistribute juices for a moist and flavorful result.
